Treat yourself to this super moist and truly scrumptious bread that has all the yummy notes of coconut, tangy lemons and sweet bananas. This tropical version of banana bread will surely become a favorite in no time.Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 cup shredded unsweetened coconut
  • 1 teaspoon salt
  • 1 stick butter (4 ounces), softened*
  • 2 tablespoons coconut oil
  • 1 cup sugar
  • 3 bananas, very ripe
  • 2 eggs, room temperature
  • 3 tablespoons freshly squeezed lemon juice
  • Zest of one lemon, grated

*To soften butter, remove from refrigerator and bring to room temperature about an hour before needed. In case that's not possible, here are instructions for how to soften butter quickly.
