Backyard entertaining is getting a Mexican makeover as grillers put a new spin on summer staples like beer can chicken, corn on the cob and even frozen beverages. This menu full of vibrant flavor is perfect for a fiesta inspired cookout, just in time for Labor Day.


Dips and Salsas


   
1. Fire Roasted Chile Guacamole – This easy, six-ingredient homemade guacamole gets a kick of flavor from chilies that are fire-roasted on the grill before combining with garlic, fresh lime juice and cilantro. Serve with grilled meats and as a dip for tortilla chips.

   
2. Charred Green Chile Crema – Sour cream tames the heat of grilled green chilies in this silky crema sauce. Serve with grilled chicken, fish tacos, enchiladas and burritos. Try the Red Fresno Chile Crema for more smoky heat.
 
   
3. Smoky Pico de Gallo with Chilies & Peaches – Pico de Gallo is a fresh chunky salsa made with uncooked tomatoes. This version has an explosion of flavors from fire-roasted chilies, ripe peaches and McCormick® Grill Mates® Molasses Bacon seasoning. Serve as a dip with chips or as a topping for grilled meats and tacos.
