Much has been written how eating shrimp may raise your bad cholesterol levels. This aside, if cooked properly, eating shrimp can be good for you.
Americans love shrimp; in fact, on average we eat about 33 million pounds of shrimp each year.
This dish is prepared with the herb basil. Basil contains a unique array of active constituents, called flavonoids, which offer protection at the cellular level, protecting cell structures as well as chromosomes from radiation. Basil has been shown to provide protection against unwanted bacterial growth. Essential oil from basil obtained from the leaves shows that this oil has the ability to inhibit several types of bacteria which have become resistant to commonly used anti-biotic drugs. Basil is a very good source of vitamin A. It contains magnesium, which promotes cardio-vascular health.
Apart from all of this, basil enhances the flavor of many dishes. This dish is easy to prepare and tastes delicious.
So fire up the grill and let's get cooking.
SHRIMP WITH BASIL
Preheat grill. You will also need skewers.
2-1/2 tablespoons olive oil
Quarter cup melted butter
Juice of two lemons
3 tablespoons grainy mustard
Good half cup fresh basil, very finely chopped
3 garlic cloves, finely minced
3 pounds of large or jumbo shrimp, peeled and de veined
Salt and pepper to taste
In a shallow glass dish or bowl, mix together olive oil and melted butter. Stir in lemon juice, mustard, basil, garlic. Season to taste with salt and pepper. Add shrimp. Cover. Marinate in the refrigerator for at least one hour. Making sure all the shrimp are well covered by the marinade.
Remove shrimp from the marinade and thread on to skewers. Throw marinade away. Now, lightly oil your preheated grill. Cook the shrimp, turning the skewers once, cook until they are opaque. At this point your shrimp are cooked.
Serve with cooked rice and or a fresh green salad.
